Oatmeal Pancakes

This week I've been experimenting with oatmeal pancakes, thanks in part to an impulse buy of egg whites from Trader Joes and inspiration from the blogging world.

My first experiment was a banana pancake:
-1/4 cup oats
-1/4 cup egg white
-1/4 cup mashed banana
-1 tsp baking powder
- 1 tsp vanilla
- 1 tsp cinnamon

The end product, amazingness!


Experiment 2-Berry apple pancake. This was a bit of a disaster, but still tasty. I followed the above but used applesauce instead of banana. That was mistake number 1, the applesauce made the consistency too runny. Mistake #2, I tried to make one large pancake instead of several small.


C'est la vie, as I said it was still tasty. I have a bit of egg white left so I think I'll continue to experiment through the week!

It's Beginning to Look a Lot Like Christmas...

....everywhere you go (A.M. ice skating in Bryant Park);





Take a look in the five-and-ten, glistening once again


With candy canes and silver lanes aglow (dessert spread from lab holiday party).

It's beginning to look a lot like Christmas, Toys in every store, But the prettiest sight to see is the holly that will be on your own front door.


A pair of hopalong boots and a piston that shoots (exchanging secret santa gifts, you will some-I scored Sephora gift card, you lose some-a snuggie),

Is the wish of Barney and Ben;




Dolls that will talk and will go for a walk, is the hope of Janice and Jen;



And Mom and Dad can hardly wait for school to start again.

More Christmas Baking!

All I have baked for Christmas had all been eaten, so it was time to make some more. It started out on Sunday, making a family recipe: Aunt Murt's Toffee.

It only has a few ingredients:



But you will need a candy thermometer and a heavy-bottomed sauce pan.
Before starting, you also need to grease 2 cookie sheets, with butter preferably.

1 lb. unsalted butter
3 Tbl. White corn syrup
2 cups sugar

1 lb. toasted, chopped pecans
1 lb. milk chocolate

Combine the first three ingredients in the saucepan over medium low heat until melted. Put candy thermometer in the mixture and heat to 310 degrees, stirring occasionally. It should be a nice brown color when close to done. Once up to temperature, stir in half the nuts, then quickly spread the mixture onto the 2 cookie sheets. It does not have to go to the edges. Wait until the toffee has cooled and hardened. Melt half of the chocolate and spread on the toffee, and sprinkle with half the nuts left. Cool in refrigerator until the chocolate has hardened. Once chocolate is set, carefully turn the toffee over to the other side, and melt the rest of the chocolate, and repeat. Once it is done, it should look like this:



All you have to do now is break it in pieces and it's done! It's so good, you might have to make two batches.



I looked at what else I had on hand, and I found some mint chocolate chips. There was a chocolate mint chip cookie recipe on the bag, which I made today. They turned out great!



Next for Christmas baking will probably be cut-out sugar cookies and cookie press cookies! Oh, and a few other baked goods for presents! Have a nice week!

Cookie Exchange Party

Hey all, Nicole here!

It's been such a fun, festive, and sugar filled weekend!

Friday night my lab got together for a new monthly "fun day." This month it was hot chocolate and s'mores made in the grill. To be honest I came pretty late because I finally was getting some positive data for the first time all week and I wanted to go home first and have a light healthier dinner. I still ended up eating a too much candy and was on sugar overload :p


Saturday I made it to the gym for urban rebounding, jumping on a mini trampoline for 45 minutes, fun and a great workout.

Then rushed home to grab lunch and then back out the door for many errands. And to enjoy the NYC holiday season at the same time.

I became the most domestic me ever when I got home at 5 and had 2 hours to finish cleaning, prepare my appetizers, and cookies for my cookie exchange!

Somehow all the pieces pretty much came together and luckily the first to arrive, my friend Ryan, helped me finish decorating my cookies.

I made chocolate shortbread cookies which were incredibly easy, the hardest part was melting the white chocolate. Not the prettiest, I guess I rushed dipping them in the chocolate...but still yummy!


ingredients:
1 cup powdered sugar
1 cup softened butter
2 cups flour
1/2 unsweetened cocoa powder
1 teaspoon vanilla

Mix sugar and butter until creamy. Add flour, cocoa powder, and vanilla. Roll out dough onto lightly floured surface, about 3/8th thick and cut with cookie cutters! Bake at 350 for 10-13 minutes or until firm on an ungreased cookie sheet. Immediately remove from the cookie sheet.

Topping
1 cup white chocolate
peppermint candies

Crush candies and set aside. Melt chocolate slowly over double boiler and dip cookies into chocolate. Sprinkle candies onto cookies after dipped. Place cookie into the refrigerator for 30 minutes to help chocolate harden.

For appetizers I put out a few cheeses, crackers, veggies, hummus, guacamole, and made a healthier spinach and artichoke dip which featured roasted red peppers. All I have to say is go make this now!







There was also wine and a special snicker doodle cocktail which I forgot to photograph, but it was yummy and easy and went with the cookie theme:

1 oz vanila vodka (2 tablespoons)
1 oz cinnamon simple sugar
1 oz half and half (sounds gross, but again it's only 2 tablespoons)
1/2 oz of creme de cacao

Other cookies of the night. So proud of everyone for all the different varieties!








Time to hit the gym to work off the sugar, but so worth it, such a fun night!
